Here’s a quick, easy, cheap and tasty Moroccan Harira soup recipe for you:
1 tin chickpeas or 110g dried chickpeas, soaked overnight and cooked until soft
50g dried spaghetti, broken into short pieces (I use wholewheat)
1 tin chopped tomatoes
1 veggie stock cube
1 white onion, chopped
2 cloves garlic, crushed & chopped
200g carrots, chopped
Salt & pepper to taste
tsp extra virgin olive oil / 4 sprays low cal oil
1tsp turmeric powder
1/2 tsp cumin powder
1/2 tsp smoked paprika
1/4 tsp cinnamon
(optional) cayenne pepper to taste
Soften the onions, carrots and garlic. Add the chopped tomatoes, spaghetti, stock, seasoning, and a small amount of extra water. Cook for approx 5 mins. Then add the chickpeas (if using dried chickpeas you will need to have already soaked and cooked these so they are ready to add) and cook for a further 5-10 minutes on a lowish heat, covered, and stirring occasionally, adding extra water if required.

If you want to eat it how my Moroccan friends and I would eat it in street cafes in Morocco, it’s served with a hard boiled egg and a few fresh dates, like this ?
