Here’s a quick, easy, cheap and tasty minestrone soup recipe for you:
1 tin butterbeans
50g dried spaghetti, broken into short pieces (I use wholewheat)
1 tin chopped tomatoes
1 veggie stock cube
1 onion, chopped
2 cloves garlic, crushed & chopped
200g carrots, chopped
100g frozen chopped kale
1/2 tsp dried herbs
Salt & pepper to taste
tsp extra virgin olive oil / 4 sprays low cal oil
Soften the onions, carrots and garlic. Add the chopped tomatoes, spaghetti, stock, seasoning, and a small amount of extra water. Cook for approx 5 mins. Then add the beans and kale and cook for a further 5-10 minutes on a lowish heat, covered, and stirring occasionally, adding extra water if required.
